Shallots

I picked up a few shallots the other day. Any thoughts on what to toss them into?

I'm thinking some potatoes and onions + miscellaneous spices (pretty much a few pinches of everything we have, knowing me) tomorrow for a late lunch, figure I might toss some in then.

Looks like I'm cooking for myself next week, though, so assuming they keep, any more elaborate suggestions?

Potates yes onions yes, pick up some Mrs.Dash (variety os spices) and your good to go. Also if your worried about health Mrs. Dash is SALT FREE!!!

I'd stay away from the onions because they will overpower the more delicate flavor of the shallots.

Also, individual spices rather than spice blends (I had accidentally typed "blands" ... which is an adequate Freudian Slip, I think) would be better, since you have individual control over the balance of flavors.

As far as specific recipes ... about.com to the rescue!
