I could keep the chicks protected that long ... I have a very nice enclosure that I used for kittens; could work well for chicks. It'll be all my show, though, no one else here is interested. Still - I may give it a go.

If you've got a good enough enclosure, you don't really need a cock at all. Hens lay eggs regardless. Do keep in mind, though, that the ratio of cocks to hens should be at least 1:15 (1:20 is better). Cocks are literal fucking machines (*grin*), and they can be very hard on hens if the ratio is too low.
