I like pecans better than those day-glo red cherries, but I want to be authentic....

I dunno which is more authentic, but evidently my mom was not the only one to put pecans on it.

You should probably make some tuna casserole, three bean salad, and Waldorf salad too. And mimosas or Manhattans to drink.

I hope I am not too late. I want to mention to make the cake the same day you serve it. The cake gets mushy around the pineapple the next day. Pecans won't.

I'm hearing that Merkin and Brit pineapple upside down cake are different. Well tough, she's getting the Brit version and it's possibly getting made tonight, but the brit version has a syrupy bit round the pineapples, so soggy is not so much of an issue, but thanks, I will keep it in mind.

When I make pineapple upside down cake, it's basically just a teacake with pineapple rings on the bottom of the cake pan and then brown sugar sprinkled over before the cake batter is poured in.

I've never used cherries before, but now that it's come up, I think i'll do that next time.

I love waldorf salad. Yummo!

I guess I really am a child of the 70's.
