I tried making banana ice cream a few months ago (from a different recipe) but the mixture somehow managed to ferment in the fridge before mixing. The result was... not pleasant, and I'm not in a hurry to try it again.

If your bananas were really ripe, it could have been the gas that caused the 'fermentation'. Incidentally, did you know that if you store your bananas in plastic they ripen quicker? Also, if you want to ripen something else quickly, just put it in a plastic bag with a ripe banana. I sometimes do it with avocados if I can't get a ripe one on the day i want to use it.
