The premix bag is paper and gets burned in the fire and weighs a lot less than a steel can. It's a weight issue and a multi purpose thing. The empty bag can be reused for another purpose. The eggs go into a wide mouth nalgene bottle in case of breakage. When the bottle is empty it can be used for water or some other storage need. And is also lighter than steel.

Having eggs means they can prepared many ways in addition to making pancakes. pancakes in a can pretty much means your gonna have pancakes. I like to cook and like to keep my options open.
