Best inoculation against conspiracist thinking I've seen -- for the dose is easy to take -- is the Illuminatus! trilogy. Robert Shea and Robert Anton Wilson.

Next best is probably Lerner's Why People Believe Weird Things. Nonfiction, with a chapter for each of the major mass delusions of our time. The chapter on Holocaust denial is especially... um, illuminating.
