I think those are actually the two halves of the lower jaw, connected by ligaments in the skull structure.

Well, if the sheep in down the hatch why would the mouth still be disjointed?
Ah, maybe because of the hangman's noose around the neck.

Or perhaps it broke it's jaw in the process of getting it's mouth around the ewe
