Few things are radder than a great cover of a great song. Your favorite little-heard covers? I don't mean, like, Crossroads by Cream, everyone knows that one.

Let's Spend The Night Together - David Bowie
a lot of Frank Zappa covers (Stairway to Heaven, I Am The Walrus...)
The G3 Jams (songs like La Grange, Red House, My Guitar Wants to Kill Your Mama...)

Jane's Addiction does a great Ripple, and a Sympathy for the Devil Way better than the Stones.

The Indigo Girls version of Down by the River is really good, and Tangled up in Blue, and Wild Horses.
