Then you just have to select the right species. In France people only eat burgundy snails, they have a light brown color (with garlic, parsil and butter ), so the one shown on the picture is not the one to eat, so this is french compliant
(BTW, people eat snails also in north africa, like Marroco, Tunisia, Algeria... and I guess in alot of other places as well)
