Hmmm curing meat with salt is a little more difficult than I thought, this page says it wants low-but-not-freezing temperatures for a month. But it also says you can brine the meat in jars, and doesn't say it has to be any particular temperature for that.

It also says you can smoke the meat, and that seems like the best way.
