Most of the cheese specialty stores that deal only in cheese, and maybe fancy crackers, usually have a broad but repeating selection. I suppose if someone comes in and finds something they like, they'll come back asking for the same. So the shop is sort of obligated to carry that after a few customers start asking.
The other thing is give a piece of sharp cheddar to people raised on Velveeta and Kraft Mac&Cheese, will often not like it. Oooo it tastes funny, it's strange, it's awful, it's not cheese, I've seen more than one spit it out. That makes it harder for specialty shops to find enough clientele to survive. It also makes them hedge their bets with blander cheeses.

I would say, not too mild, but not too sharp; nicely complex with both a bit of sweetness and a bit of nuttiness. Would go well with any accompaniment, but has plenty of fortitude to stand alone.

But enough about Limey.

I have a complaint, with good cheese you're spose to wait for it to be room temperature, but this doesn't seem to last long enough, so far it's gone before it has a chance to warm up.
