My landlord gave me a wigeon drake, and I am going to smoke him. I am going to make an apple rub, and smoke him with apple wood.

I'm going to set up the grill for indirect heat, and using a drip pan so we use the duck fat for potatoes.

The duck was only about 1.5 lbs and smoked in about an hour and a half. He was OK kind of gamey. Keryx said he tasted like organ meat which she liked a lot. the rub turned out good I will use it on a pork roast next week.
Apple Cinnamon Rub
1 Granny Smith Apple
1 Tb Cinnamon
1 Tb Kosher Salt
1.5 Tb Brown Sugar

What do ya do with that apple, mush it up? And then mush everything together?

Sorry about that. You take the apple and core it and slice thin on a mandolin, dry it in the oven, then put in a food processor wizz it up as fine as possible. The apple does not dry out completely so you will not get a powder. That is the hard part, just mix the cinnamon, brown sugar , and salt. I am smoking a Boston butt rite now, I will let you know how it turns out.
