Fruit Pizza

Sounds weird but really good.

Cover a pizza pan with the crescent roll dough and bake till brown.
Cover with cream cheese that's been thinned out and vanilla added.
Cover about the center half with well drained crushed pineapple.
Cover the whole thing with blueberries, strawberries, and Kiwi... or whatever.
Thin apricot jam (sugar free for me) with water, and heat in the microwave.
Paint the thinned jam over everything, to hold it together when serving.
Pop it in the fridge, and serve cold.

Yummm. You could do that hot too, like a flambe couldn't you? If you just poured a bit of something yummy from the liquor cabinet over the top...with a little brown sugar. Voila!

I forgot, the cream cheese gets 2 teaspoons of sugar (Splenda for me) along with the vanilla.

A friend of mine used to make something like that, except she used strawberry jam for the "tomato sauce," and scattered pieces of fruit a little less liberally over the top, to resemble more of a traditional pizza topping look.

My mother and wife have both made this, but their recipe uses a giant sugar cookie for the crust.

Oddly though, I like everything that's on it. Except the pineapple, pineapple makes my mouth raw and sore.

Yes, she makes it that way for people that are more sugar tolerant.

Pineapple can do that. It contains enzymes that break down human proteins. Pineapple workers can have their fingerprints removed, and if you try to live on nothing but pineapple, it will eat away at your innards.

You might be extra sensitive.

Here's how mine turned out. I didn't have a pizza pan so I used a biggest baking pan I have. That's why the crust was a tad thick. Also, I used half the amount of cream cheese so there wasn't much cheesy flavor. I guess I could've used more.
