A way of cooking chicken breast

I need your help! My sanity may depend on it! A week or so ago, I was stumbling through cooking pages and saw one on a method to cook chicken breast so they are nice and moist. I forget what it is called and can't find the stupid page again. I think I remember seeing that it is a Chinese or other Asian way of cooking meat. Basically, you bring water to a boil, drop the meat in, put the lid on and remove it from heat to cook.

Does this sound familiar to ANYONE!?!

Sounds like a recipe for salmonella to me....

Sorry, can't help. Beest sort of boils chunks in gravy to make sauce for pasta sometimes, but he keeps the pot boiling/simmering.
