hmm. what would you want with a whole boiled potato? peel the fucker normally, chop it up and be done in 5 minutes. Time is money.

I knew that trick already. It's much faster to peel and cut a cooked potato in than it is to peel then cut raw potatoes.


You've eliminated all the prep time plus the potato is far superior tasting than the peel cut and boil method.

What energy? The water boils the potato. You want to save 10 minutes on using your range? I can understand that but as far as a waste of time the water is doing all the work I can be doing something else besides peeling and chopping.

Keeping the water boiling for an additional ten minutes requires the burning of additional fuel. It is wasteful and stupid when the end result is exactly the same either way.

True. ( edit- Because of the sugar ) We eat red or gold and they boil fine and you don't even need to peel them although roasted is better.

It takes waayy more energy to roast a potato if any energy conservationist wants to debate the evils of roasted reds now.

I think all of that is in the skin (the part being tossed out, here). The "meat" of the potato is just like eating spoonfuls of sugar.

Potatoes Rule. They each have individual strengths and weaknesses and there is not a single way to prepare them that suits all varieties. Soem make better fries, some are better boiled, etc.

Everyone who want to disparage the awesome majesty of the potato can go suck a free range egg.

My memory of the info is that the C evaporated/oxidized when a hot baked potato was cut open. I always wondered if it was retained if you let them cool first but never cared enough to google - till now.

The wiki page on bakes potatoes says

Once a potato has been baked, some people discard the skin and eat only the softer and moister interior, while others enjoy the taste and texture of the crispy skin. From a nutrition standpoint, a large percentage of the vitamins, minerals, and trace elements in a potato are found within or immediately below the skin. Potatoes baked in their skins may lose between 20 to 40% of their Vitamin C content because heating in air is slow and vitamin inactivation can continue for a long time. Small potatoes bake more quickly than large ones and therefore retain more of their Vitamin C.[2
Says here that boiling in the skin and adding 1% table salt to the water seems to allow the least C loss, but I don't think they took microwaving into account.

What if I told you that I am just too lazy to find it and you'll have to take my word for it. I'd still like to see the original research that shows "all the vitamins are in or near the peel" I think that was some BS invented by some overworked mom who didn't want to peel another fucking apple for her kids.

Okay, being the Spudman, I'm going to weigh in now before thread drift happens, and a lot of fiction is taken as truth.
First, potatoes are evil, so they deserve to be boiled and flayed.
Second, There are no vitamins in the skin. Squirell was almost onto the truth. It was an invented legend to stop people from enjoying the full flavor of the potato. The only thing the skins have in them is behavioral modification compounds, put there by the government to control the masses. This has been proved many times, but the web pages mysteriously disappear.

I just made these potatoes. They're good! I could improve upon it: drizzled too much olive oil and I didn't have a paint brush so I could do better at just coating the top. I didn't have a potato smasher thingy so I just split them and smushed them with a glass then arranged it better with a fork.

They were the yum.
