Dried Beans

Other day I soaked big butter beans for around 14 hrs. then cooked about 8 hrs. Were still firm, but eatable.
I had no idea that they would get old.

As beans age they lose their oils, resist water absorption and won't swell.
Well they still swell and taste alright. Just didn't cook down.
THD-drift. Other night I fixed Sloppy Joes. As I was digging the crap out of the easy open can I had a flash-back.
Over 60 years ago, times were a little tight. My Mom would pour a little vinegar in the katchup bottle, shake it, to get the last drop. I learned quick to never ask for ketchup when the bottle was about empty. Yuk

I always soak mine overnight. But I had not heard that about beans either. I wonder if they were stored differently would they last longer.

Survivalist canning, in nitrogen. The inner oils can't go very far.
