... a pineapple and coconut cake. It's a variation on the coconut cake I've made a number of times before. So far it's looking pretty good as it cools, but the proof will be in the tasting as always.

...a white cake with strawberry frosting and strawberry filling. Kitsune made strawberry jam, yesterday, and it didn't set up quite right, so we decided to go ahead and use up the delicious strawberry goo.

I only have one thing to say to that cake choco and that's YUMMO!
My cake tastes nice, but it falls apart a bit when it's cut. The consistancy is right, but I think next time I'll use pineapple juice instead of crushed pineapple. It's the fibres of the pineapple that're making it crumble when it's cut. Maybe I need a sharper knife. lol

Strawberry WTF. I used angel food cake. No lady fingers around here.
Using the below recipe. no way will all fit in pan, but it's nice to eat later, lo-cal ya know.
3 pkgs. plain ladyfingers
1 lg. can frozen strawberries
1 tbsp. cornstarch
1 pt. whipping cream
1 (8 oz.) pkg. cream cheese
1 (3 oz.) pkg. cream cheese
1 c. sugar
1 tsp. vanilla
Drain juice from berries. Cook juice and cornstarch in saucepan, stirring regularly, until clear. Let cool and stir in berries. Beat cream cheese, sugar and vanilla until stiff (like whipped cream). Beat whipping cream until peaks form. Fold whipping cream into cream cheese mixture.
Line the sides of a 10-inch springform pan with ladyfingers, standing on end, rounded side facing out. Line the bottom of pan with a single layer of ladyfingers.
Put 1/2 of the cream cheese mixture over the ladyfingers. Put in another layer of ladyfingers. Put in the remainder of the cream cheese mixture. Put the berry mixture on top. Leave in refrigerator overnight.

The cream sauce was exactly what it says. Just about a half a cup of cream and some chicken stock added to the leeks, mushrooms and garlic after they'd been sweated down a bit. Pour the whole lot over the chicken, potato and carrots and then pop the lid on and cook for about 3 hours in a medium oven.
It was yummo.
Those are 'new' potatoes. The small red kind? It's a tradition here to just peel around the middle - I must admit I don't know why. I blistered them a bit in the frying pan, then put a finger depth or so of water, put the lid on and let them cook thru.
Hmm... leeks are looking good at the grocery this week. I'm always looking for new ways to fix chicken, I may try yours!
I just made lemon cordial for the kids. They'll probably think it needs more sugar, but I think it's fine. I'll use it for my vodka if they wont drink it. :)

It's my friends 40th birthday, so it's my present to her. She was going to do her own cake (as mothers usually do if they want one), so I had to stop that.
You slice it like any other cake Zen. lol and then you gobble it up and say yumm. :)
Classic, the make up brush is there because when I sprinkled the 'sand' over the cake I had to brush it off the shells, firstly because it didn't look good, and secondly, because it wouldn't stick there anyway. (the sand was sugar with a bit of gold colouring mushed into it. I was pretty happy with how that bit turned out. It was the only thing I wasn't too sure of).
Anyway, I get to present it to her tomorrow. I hope she's going to like it.

Tacos with srs greens, interesting! The lettuce is more like filler in most tacos, this is a good way to go.
I eat tacos a lot. Sometimes more than once a day.
I put a flat griddle over two burners and fit 4 corn tortilla shells on it.. wait a few minutes until they start to curl up, then flip. Sprinkle with a little cheese, diced chicken or a few beans, a spoon full of hot salsa, couple drops of habenero sauce and a fat slice of avocado. When melty/crispy enough, remove from heat and fold around a handful of greens.
They're so awesome...

I made my most recent meatloaf with ground turkey instead of beef. I think it was a little less fatty. It was just as good, anyway.
We have Meatloaf a couple of times a month, because its super easy and I can slip a heap of grated vegies into it without the little people noticing too much. Actually, its only the redhead that is anti-vegie, but he devours anything fruit like.
Fruit kebabs are a winner here too, coz the boys can *build their own*.
Dad has been complaining that we only eat what Mum and I like recently.

But instead of challenging his assumption - he is in his 70th year after all - I offered Mum spag bol this week as a sop. Now, she loves it when I cook - she doesn't have to cook AND I wash up as I go along. The usual deal is one cooks and the other cleans up, so there is far less work when I cook (also because I'm of a one-pot style).
So it's turkey mince (already bought and in the freezer) and an Aldi vegetable sauce. Aldi is a cheap European supermarket, but I'm not gloating over what the sauce cost me, it's the fact it's low fat and loaded with veg (carrot, courgette and peppers) and he thinks he's getting away with something because he's getting meat and shop-bought sauce and pasta (hehehe).
Regardless, he'll enjoy it, and that's really what's important.

Here is a Mexican-style casserole. This is the kind of thing that you can make fancy or plain. The basic idea is to layer corn tortillas with other stuff like black beans, cheese, corn, chopped onion, whatever you like. I dip the tortillas in a tomato-based sauce before layering in the pan.

I think that it comes from the idea that the 'sop' soaks up the bad feelings.

Aldi is a cheap European supermarket
I've been shopping at Aldi since I was a little kid. They always have the best cheap sandwich cookies. When I was in Vienna a couple of years ago I noticed a store with an Aldi-like logo. It was called Hofer. I went inside and it turned out to be an Aldi in all but name.
Thought that was funny. I'd always associated Aldi with low socio-economic areas in the US, and here I'd found one in a sketchy part of Wien.
The nicest Aldi I've ever seen was in Newcastle. Makes sense I guess.
An Aldi opened near me. I went in and became very confused and frightened, and had to retreat to a Trader Joe's to hyperventilate over a spiced chai tea and an organic flax seed and pomegranate muffin.

I don't like the Aldi stores we have here. There's not a huge variety, and some of the product quality is not exactly what I prefer. It's great for catering kids and teenagers parties though. Lots of cheap lollies, softdrinks and chips.

Hmmm...sort of. Most of the stock is not well known brands. It's mostly imported (but then again, so is most of our processed food), but from different places than we're used to. It's kind of like an alternate food universe really.
It's good for cured meats, the sort of sausages you don't usually see, and they do a really good value mixed salad. Or is that Lidl? They're very close to one another in Aylesbury, and close in type. It's £0.99 for a 500g bag, which is much better than Sainsbury's or Tesco - I always buy it if I'm providing salad as part of any meal I'm preparing.
Oh and fish - very good for fish for their size. Our smaller supermarkets tend to stock only breaded or battered, but both Aldi and Lidl (of a comparable size) do a range of plain fish, which suits me a lot better. More expensive on fizzy water though. But I've checked every supermarket in a 3 mile radius and I don't really think I'll improve on 12p for 2 litres!
To me they're nothing like the shops at petrol stations, but then I can't be sure that ours are anything like yours anyway :)

Today I made some chicken tenders for my son. He likes curry so I marinated them in some curry paste before cooking.

Someone asked me for the recipe for those cupcakes, so here it is.
3 cups of SR flour
2 cups of Sugar (I prefer castor sugar)
1 cup of milk
1 stick of butter chopped up and softened
4 eggs
put all ingredients into a large mixing bowl (preferably electric mixer) and beat slowly till ingredients are incorporated, then on high for 10 minutes and it's done.
Put it in cupcake pans and bake in a hot oven for about 15 mins, or you can make a large cake (or two). Baking time will be around 30 mins on medium/hot oven depending on what size pan you use.
It's really important to have the ingredients all at room temp for this one. If they're a bit cold they don't tend to rise as well.
I did steak fajitas on the grill last night. They turned out pretty good with a nice tangy/smokey flavor.

Shop bought a selection of food to welcome Mum & Dad home.
I bought far too much, which is a family tradition, but I was buying special deals (3 for 2 etc) and it can all be eaten up until the weekend.
The wheel that turns the whole meal is an M&S fish platter which I saw a couple of months ago. We all love fish, so this should be a nice surprise. I will suggest we take some round to Grandad as well, who asked me for a salmon and cucumber sandwich yesterday and today (sadly, today I was in Tesco and they'd run out).

Add to the pic, tortilla chips & dip, baguettes, and the fish wheel as above. And laid out much better, on a set table with cutlery, napkins etc. I was very pleased.
Oh - some of the labels are a bit awry, but even with the blurring you should be able to work out which is which.
Smoked a small flock of chickens for tonight's barbeque. They lived in the smoker for about six hours, then I finished them in 225 deg oven overnight in the roaster you see here, with a foil tent on top and a bottle of porter in the bottom. I'm starvin!

I went back and looked again after Tulip's comment - I had the scale of the photo wrong in my head. Them's whole chickens! I thought that was 4 sections on a UK sized grill pan.

I coated the ribs with prepared mustard, then coated with a variation on Paul Kirk's sweet pork rub. I smoked it at 225F using one chunk of hickory, three of oak and 5 or 6 of cherry (not all at once, of course).
I also made up a new sweet sauce that everyone seemed to like real well.
