I like Edie Brickell's version. I love a good cover.

Jane's Addiction does a great Ripple, and a Sympathy for the Devil Way better than the Stones.

The Indigo Girls version of Down by the River is really good, and Tangled up in Blue, and Wild Horses.

Blues Traveler does a good No Woman, No Cry, with some help from Ziggy, and their Low Rider is very cool.

Tori Amos does a shit-ton of covers, I like I'm on Fire and Landslide the best

Warren Haynes does a ton too; One, Stella Blue, To Lay me Down, Madman Across the Water, And it Stoned Me, It hurts Me Too...

Whoops...totally misread the reference. I see that the "Harrison's kid" thing was in reference to the Concert for George video, not the uke. That is, in fact, Dani Harrison. Great concert, if you haven't seen the whole thing. Killer.
