Sour Cider

As a former homebrewer who hasn't got time to do that these days, I have tried to keep my hand in by making Cider. But I haven't got time for that either, beleive it or not. The last batch I ferm'd has sat for over a year, and some of it is vinegar. Some of it is not vinegar and some of that stuff I have kegged as I face the reality that I won't bottle it in this lifetime.
The cider I've kegged is a bit on the sour side, somewhat like a lambic. I'm liking it more each day.
How about you Dwellars, any good fermentations lately?

I don't brew yet -- but it sounds like you got yourself some perfectly good cider vinegar there. Start makin' you some spinach!

Wilted spinach, hot, plus vinegar, salt, pepper, and butter. Good eats.
