Preparing for a New Year's Eve smoke
It's going to get almost to 40F tomorrow. So I think a smoked brisket would be just the thing to ring in the new year.

It's cold, 33 deg. It's been wet, though it's clear now. I love brisket, but it's the hardest thing for me to smoke. It needs/deserves a long low smoke, and I just don't have the patience to feed my charcoal only smoker all day long to keep that naked iron cylinder at 200 degrees.

The whole smoked vs smoked was done up in a Bevery Hillbillies episode.
Smoked crawdads. You can probably get them in Beverly Hills now. The possum livers might still be hard to find though.... That was not the funniest smoked crawdad episode. Season 6 had Jethro teaming up with hippies to search for smoked crawdads. Found this clip so far P.S. No BBQ or smoker smilie......

I was borned a poor half-Polish child in Butthole *cough* Beaumont, Texas. I started smokin' crawdaddies when I was but a wee pup, and it war good. Then, I growed up and moved away to the land of no crawdaddy smoking.
Many a year'n passed. One day, my working buddy name-a Lysle (also borned in East Texas) got on that intarwebs and ordered hisself up some fresh-cooked smoked crawdaddies, shipped die-reckly overnight from Looziana itself. And then he invited me over to drink Tres Generaciones ™ and suck them heads with'm till they was all done up. Mmmm. Mmmmm. Good. |

Finally had some time to upload the pics.
Here's one of them. Right off the smoker. It looks like a meteorite. It's about to be foil wrapped for the resting period. Here it is after resting - sliced and ready to serve.
