Preparing Wild Boar?

Does anyone have any sound advice? I saw one on the hill this morning and since they are not native it is open season. Would it be worth the time to hunt/butcher etc..?

How big is your freezer.

They are reputed to be quite clever and extremely nasty, tend to charge. dadwolf went boar hunting once, said he'd never do it again. Stuck to deer and pheasants after that.

I had a medium/small chest freezer along with a refrigerator with a large bottom freezer.

This could take some preparation...

You can cure it like you would do with a ham. Also very good as a roast. Slow cooking in red wine can be a real treat.


But don't miss it, it is a tough and vicious animal. Here, they're known to get up as if nothing happened after being hit by a car.

Their young are a real treat. Either roasted or prepared as a paté.

The Mrs. just emailed that she'll buy a new freezer if I take a hog. Gotta be careful though.

Griff will hunt them here in GA.

1. Wear gloves when you handle them.
2. It is really important not to gut shoot them or you can just throw it out for the beasts to eat.

Most people then debone it and put it in zip locks in the freezer and further prep it as you need it. The roasts are very good slow cooked on the grill. I am real meticulous and try to get off every bit of meat minus the fat and grizzle because those small bits are great in stew and chili. Good luck.

Wild boar carpaccio is gorgeous, as are sausages from whatever is left over (not from carpaccio, I mean from anything else!)
No experience preparing, just with eating, sorry.

we shoot young hogs weighing 100-150 lbs and prep like any other hog. great cooked in a smoker
