Vietnam is fun and safe, avoid the package stuff and you'll feel a tad 'first trekker' to boot if you get far enough away. Lankawi off Malaysia is a blast (and cheap booze!), KL is a drag unless it's business. Avoid the gold coast in australia, crappy tourist stuff. If you're looking for something a bit out there, go exploring Cambodia but don't say I didn't warn you. Laos is good if you like backward corrupt communist regimes. Thailand if you like ladyboys (kidding, can be great fun). NZ is great fun if you like extreme sports or hiking in particular, lots of exploring to do. Russia can be utterly awesome but I've got no personal experience (just yet). Turkey can be a great cultural experience but don't go waving that yank passport around, same goes for Iran, much safer than you'd think.
There are various small islands in the Pacafic that should very cool, St Kitts is the only one that comes to mind off the top of my head but check a map, they're well off the beaten route and offer all sorts of surprises, certainly somewhere I'd love to go. Maldives are another option.
