I go with the al dente. I like my grits to be a bit chewy. And they're supposed to dressed with a bit of butter, salt and pepper, and eaten with fried eggs and bacon.

Uggg. I agree. I never ate grits or really heard of them till I moved out of the North. Now I love them just as you describe.

My view of it is that it depends: do you want sweet or savory? Melt some butter on and into them in either case.
