			I always though fish mercury level was based on the proximity to shore that the fish frequents.  ie...deep sea fish=less mercury

			No, it's how far up the food chain they are. Fish are eaten by bigger fish, and the biggest (and oldest) fish suffer the cumulative effect of the mercury in all the smaller fish.
