The difference between European and American food handling practice is that you get to see them do it more often in Europe. There are reasons US restaurant kitchens are hidden away from the prying eyes of the patrons.
Except at Buca di Beppo. I really want to eat at the kitchen table one of these days. Speaking of which, have they updated the Pope?
