	French Onion soup sauteed 2 large white, and 1 large red onion in some butter When carmelized, I added 1 can of lager beer, 4-5 cups of water, and 4 tsp of liquid beef oxo Let simmer 20 min, then put into soup pots, added homemade croutons, and mozza cheese, baked until golden. Made exactly 4 pots ( which is perfect for this family) chances are I will be eating most of it myself... my kids are not huge soup fans.  |

			Cutco, ektuelleh... that peeler'll plane off your knuckles or your fingernails if you don't watch out.  I also zested the lemon with the peeler for big zests rather than little grated powdery ones.  The recipe likes lots of garlic and plenty of lemon juice and zest.  Keeps it peppy.  Be generous with the cheese, too.  One day I will throw in pancetti, like I said.  The asparagus tops, lightly steamed, make an excellent garnish to top each serving with, and what else are you going to do with the very points of asparagus spears anyway? 			Yeah, that quinoa thing:  after rinsing the bitter off it, two volumes of liquid -- water or stock -- to one volume of quinoa, bung 'em into the rice cooker.
