Standard and regulated labelling is central to consumers making meaningful ethical decisions. As you say, ethical consumers won't save the world, which is why labels on food are only one element of protecting limited resources.
This debate is big in the UK at the moment with regard to carbon labelling in supermarkets. Tesco is planning to label every one of its product lines, while the Environment Ministry is going to develop a common labelling system -
