Oh yes, that's the joy of it - it's a method of using up all of a pineapple (save the top and bottom of course).
I got the idea because of the Aldi advert on TV. Mum and I can only eat a small amount of pineapple before it starts stinging the sides of our mouths. Grandad enjoys pineapple, but if you put too much of anything in front of him he turns against it. So I was online looking for low fat pineapple recipes. This doesn't help with eating the fruit (but between three of us I reckon we can manage) but it does make use of something I wouldn't normally use.
Tonight, Mum's making bubble and squeak from the leftover cabbage and potatoes that accompanied last night's chicken casserole.
Nom nom nom.
