As you might remember from
last year, I'm nuts enough to BBQ in the dead of (almost) winter. Did I mention it's snowing?
This year I am cooking two pork butts ~ 9 lbs each. I want them finished by 4pm tomorrow, so they went on the smoker at 10pm tonight. I just checked them at 11:45pm - temps are looking good.
The wood is a combination of cherry and pecan.
Since I'll be sleeping through part of the cook, I figured a BBQ pad was a good idea.
