Think they ate it afterwards? Out of curiosity? I mean ... maybe a scientist took home just a bite. If I only had one bite I would probably pan-sear it with butter. But, if I had two I would pan sear the first, and steam the second. The steamed one would be closer to the true taste. The seared one would just be a more memorable and favourable interpretation ... which is a good thing if you have to report on the taste afterwards.
