I thought exactly what you thought--you could use the rind even though it had been carved up. To be honest, though, I've never met anyone who ate their jack-O'lantern. I've never known anyone to
collect post-Halloween pumpkins and make them into mash for the hungry, either. But, I suppose it could be done.
