Steve Vai invented a seven-string guitar, for Ibanez. "Steve Vai's Ibanez"
Presumably, whoever Paul Gilbert is, he plays an Ibanez also. In fact, he has a signature Ibanez. "Paul Gilbert's Ibanez"
Whether you were refering to a "signature" guitar or not was not specified. However, Steve Vai actually invented a guitar for Ibanez.
"Steve Vai's Ibanez" is a seven string. "Paul Gilbert's Ibanez" is not. That's a difference.

That is a correct answer. On Jeopardy, when this happens, the judges realize that the contestant produced a correct answer that was not forseen by the writer of the question. This is the fault of the question writer, and not the contestant.
