Just wanted to throw this out there because I tried it on turkey day and everyone must've loved it since there were none left.
Fried polenta squares:
Make polenta, fridge it to firm up, cut into 1" squares (about half-inch thick). Pan fry on both sides until golden brown. Top with whatever. I made a shrimp mixture (chopped cooked shrimp, scallions, red pepper, jalapeno, scoop of mayo) and sprinkled shredded parmesan on top.
