mmm. curry.
 
we love curry. last night, for mothers day, i tried out a new recipe.

2 boneless (skinless) chicken breasts
2 tsp vegetable oil
2 tsp red curry paste
1 large green onion, coarsely chopped
1/3 cup chicken broth
1/2 cup unsweetened coconut milk
2 tsp fresh lime juice

put oil in a large pan and start heating at medium high. put the chicken between two sheets of wax paper and pound to 1/2 inch thick. season with salt and pepper and cook in the oil until almost done, brown on both sides. remove the chicken and set aside. add the curry paste and green onions to the pan, saute about 1 minute. add the chicken broth and let it boil about 1 minute, or until it glazes. add the coconut milk, lower heat to medium, and let simmer until it coats the spoon. put the chicken and any collected juices back into the sauce and simmer until the chicken is done. i normally would serve it over rice, but last night i served it over rice noodles, and while it ended up a bit hot for caseys taste, it was really good.

As good as Metroid Fusion?

(It does sound pretty good. I think Jenni and I need to eat some curried chicken one of these days, except she's vegetarian.)

im not really a tofu fan, but i imagine you could make basically the same recipe using a firm tofu. alternatively, you could probably steam some veggies, put them over rice and make just the sauce (make it a bit thicker).
