Slow cooking is the Debils work. Pan seared in sea salt and ground pepper.

No! Rock Hyrax is too delicate a flavour to be overly salted.
I agree with a simmer. Garlic, rosemary and potatoes over the embers of a campfire.

With grog.
And a husky swagman for dessert.
