Squarsh!
I have tons of it from my garden. The yellow crooked neck kind and the green zucchini kind. Anyone out there have some good recipes?

Oh yum. I eat a lot of both. Fried with kielbasa and mixed into pasta with either a jar of sauce or some canned tomatos, garlic, and artichoke hearts is really good.
Sometimes I stir fry it with other vegetables over rice, sometimes I just plain steam it and add a salt, pepper, and/or butter and have it as a side dish, and sometimes I'll slice them longways and brush with olive oil, salt and pepper and put them on the grill with other summer vegetables and various meats. |
Steam it and eat it as a side dish. Plain. It's delicious on its own.

Use it in a ratatouille. There's a recipe in The Latest Recipe Thread -- it took two posts because I forgot the para about what to do with the squashes the recipe included and prepped. Look for "It's Big, This Season" and then "Oh Rats, Remy" in the thread, both on p. 11.

The zuchinni makes a great stuffed squash. You can make it with whatever you like, but mine is usually:
2-3 zuchinni cut length wise, seeds scraped out (boats) Mix 1 pound of ground beef/turkey/pork 1 1/2 to 3 cups of cooked rice (white or brown) I use more when stretching the meal, or trying to be more healthy 1 large diced onion 1 green pepper garlic, salt, pepper and basil to taste 1 egg smush into boats, pour spag sauce over the top cover with foil and bake at 350 for about 45 min. zucchini bread is great ( it can be shreaded, and frozen in the amounts needed for each recipe) Both squash can be diced small and added to spag sauce, scrambled eggs, hamberger helper etc... makes a meal stretch and added health benifits. Try adding cooked squash to your salsa. |

I'd rather eat squash any time over sweet potatoes. Zucchini is good too.

I love to sautee them with onions... some times I take it a step further and add in leftover corn bread, some cheese, parsley and an egg and bake it... voila squash cassarole...
