Help Pot Luck!

I have been invited to two pot lucks in the next few days. For one of them I am going to fix my infamous taco salad. I get pretty creative with it and it usually seems to go over well. But I am drawing a blank on the second (and no, I don't want to make taco salad twice). Does anyone have a suggestion for a dish that doesn't use too many expensive ingredients and is relatively simple to fix? Thanks!

Corn Casserole

1 box Jiffy corn muffin mix
1 1/4 sticks of butter
2 eggs
1 8 oz. container sour cream
1 can corn, drained
1 can cream corn

Mix everything together, spread into a 9x13 baking dish, and bake uncovered at 350 for 45-50 minutes.

Sounds just the ticket, Clod. Thanks! Some people have creative blocks and I was having a cooking block (not to be confused with blog). ;)

For something sweet try a jello salad.

1 large tub of cool whip
1 large box of orange geletin (jello)
1 half package of marshmallows
some crushed walnuts (optional)
1 large can of drained orange slices

Mix all together and chill until ready to serve.

Although boring but how about cupcakes? :D Speaking of jello, jello shots? :D Okay, the jello shot idea is a joke. :p

I have never made a jello salad but that looks good.
My mom loves jello.

Dip for corn chips from a friend of mine.
I do not have ingredient amounts.

cream cheese spread on the bottom of a pan
topped with salsa
then with cans of chili
then with more salsa
then with cheese
and baked in the oven until melted/warm
