Yes shame... with 1 tbls smoke salt, 2 tsp chili powder, 2 tsp black pepper, 5 garlic cloves, crushed, 2 tsp rubbed sage, and 1/4 tsp ground allspice. ;)

Don't forget to tenderize or it'll be very chewy.
