Blizzard BBQ?
Ok, so I grew up and lived 40 years in Rochester NY, in the one of the great lakes' snow belts. I am now a refugee from winter living in sunny San Diego, and I get a vicarious chill from the news of the storm and phoning relatives.
But what I want to know is, who barbeques/grills out in the weather? I used to shovel a path to the grill and carry on. Being shut out of work for a day gave a perfect excuse to create some goooood comfort food. I know that there are some serious foodies up in the upper right hand corner... |
The best barbecues I ever attended was around 120km south-west of Moscow on a snowy February day.
First we had a sauna, and although I didn't roll naked in the snow afterwards, I did nip outside and rub my naked flesh with handfuls of snow before getting dressed, Then the barbecue - large chunks of lamb roasted over hot coals on skewers and handfuls of herbs which had frozen because the ambient temperature was around -18C and chunks of bread warmed near the barbie. Those of us drinking vodka enjoyed the slightly thickened, almost oily texture of that drink at that temperature, those on beer had to stand their mugs at the edge of the brazier in order to keep the beer from freezing. Fantastic! |

That's a beautiful bird! Plus, it's dinner time, and I just got really famished. that looks suspiciously like a Big Green Egg...have you ever tried one of the vertical turkey roaster racks? you get a chimney effect and the bird cooks faster. We can fit up to a 16# or so bird standing up under the lid. Insulated carhart bibbs for shoveling the driveway...sorel boots with the nice felt liners. |
Steambender - yep that's a BGE! I've not done a turkey vertical, but I do chickens that way all the time.

That salmon looks beautiful. Did you bring the whole fish and the fillets I see in the foreground? BTW, salmon here costs about $10 lb. Did you catch that whole salmon or buy it? How much was it? BTW, limey, as for rubbing snow on naked flesh at zero degrees Fahrenheit - you're nuts.:nuts: |
Rich - yes, we brought a whole fish (sans head) that weighed probably about 25lbs, and two fillets from a fish that was about the same size. We had to cut the whole fish in half to fit in the bbq- we stuffed it with lemon, butter, onions & dill then wrapped it in foil and cooked it for several hours. We did the fillets basically the same way.
$10 a pound? I bet it is farmed. I remember when we were kids, my father decided to grill filet mignon for Christmas dinner. On Christmas Day, we got hit with a major ice storm. While fiddling with the charcoal before putting the filets on, the grill slide down the back steps. 2nd try went well and it was the best damn Christmas dinner I've had. The old man could COOK.

Beautiful salmon! cook it slow or fast? we do it both ways depending on the meal. The egg is great for low and slow smoking fish and ribs.
The latest BGE experiment is Pizza @ 750 degrees, on a pizza stone. Takes an hour to get up to temp, and about 5 minutes to crisp the crust & pepperoni and melt the fresh mozzerella. yummy wood fired taste Next step is a party with about 4 or 5 14" pies with specialty toppings planned out in advance, about one every 15 minutes. I've read about people who build masonry pizza ovens out in back, next to the vegetable garden to pick real time toppings... Had to replace the BGE gasket to cut down on air leaks, and the IPE table I built to hold the egg is lightly scorched from being within 1/4" of the lower shell. |
I torched my gasket a long time ago and I haven't replaced it yet. One of these days.... :) You should probably put a firebrick under the egg - the little feet that come with it really don't raise it up high enough to protect what's under it.
I usually cook my salmon low & slow, but it is packaged in foil so it doesn't get dry. I've tried pizza, but I've botched it too many times to even think about trying again. I guess my "specialty" is ribs, but I like doing briskets & pulled pork too. I just ordered a new small BGE for taking out on the boat - it should be here next week! As a cult object, the egg is great. and provides a built in conversation starter when we entertain outside. All the downwind neighbors seem to appear when I'm slow smoking fish, the neighbor brings over his fresh caught trout and splits the final results with me. Ribs seem to attract visitors, too. Where do you stand on the BGE vs Primo ? I'm nowhere near a new purchase, although now that you mention it, the smalls are pretty cute for travel. |
I have never used a Primo, but I am so happy with my egg that I don't see the need to try anything else. ;)
We've got all kinds of recipes on the BGE website - there is a recipe section, but people post recipes daily on the forum. I wasn't sure if a small was going to be very useful, but after going to eggtoberfest & seeing how much you could cook on one, I was sold. Quote:
