As to Cowboy Bebop, rest assured that the only obstacle to my finishing it (more than once, without question) will be the $25/disc cost. I'm having to pace myself on the acquisition of the rest of the sessions. So far, I've purchased two at used prices (under $10) and I gave in and got Session Three at retail ($25) :(. I'm patient, though. The slow pace gives me time to re-watch all the earlier episodes again and again.
