Fried egg sandwich. All you need is a microwave and a toaster!
We have a 4" square corningware dish that we rub butter on the bottom and sides. Crack an egg into it and just slightly stir it a bit to swirl the yolk into the white. (or just poke the yolk if you want it in a blob) Sprinkle with salt/pepper. Cover with saran wrap and place in microwave for 1:09. Put toast in the toaster. Egg will finish before toast. Peel back the saran wrap and lay a slice of cheese over the egg and pull saran wrap back over the top to hold in heat. Butter the toast, slide the egg with melted cheese onto one piece of toast and cover with the other. Yummy sandwich! Drink coffee, milk or OJ. |
That's brilliant Hoof! We make fried-egg sandwiches all the time, but it never occurred to me to do it in a square dish in the microwave, we always had to get a pan dirty. I'm seriously going to go buy a 4" square dish tomorrow. Where did you get yours?

If I don't know what to eat mac & cheese always satisfies. Or maybe a turkey club sandwich. Toast bread, put mayo (or your preferred condiment) on the bread, add lettuce, crisp bacon, cheese, and deli sliced turkey. Yummy!! |
We're having lamb steaks with potato scallopini and some green steamed veges tonight. I'm getting hungry just thinking about it....Mmmmmm....laaaaammmbbb...*drools*

We had fish and chips tonite...beer battered chips [insert homer drooly thingie here]. I made salad as well, it appears those under the age of 4 dont eat salad.
So I had to make *trees*, carrots and corn [trees being broccoli]. When I make mac n cheese, I deface it royally with shaved ham, corn, ricotta cheese and grated carrot. Or even smoked chicken breast. |

My sweetie made an awesome veggie soup and a huge basket of fresh homemade rolls. Yummy.

We had leftover pizza last night. I'm thinking I don't want to cook tonight either because we're about to have far too many leftovers for the weekend anyway.
But next Monday I will be going to the grocery store and stocking up on ingredients for several new recipes I want to try from a book I got for my birthday. The easy-dinner that gets used the most around here is Cashew Stir-Fry: One bag of frozen stir-fry vegetables (we prefer the "Edamame Blend" with--duh--edamame, water chestnuts, and red bell pepper), toss in a hot skillet with olive oil until hot, add any sauce you like (we use a different one every time, generally garlic- or sweetnsour-based), simmer until sauce is reduced a bit, throw in a bunch of cashews and serve over rice. |
