Try this:
Largely dice your potatoes, and at least one large onion. Boil until almost done... say about 5 mins from finished. Drain Put in oven roaster pan and mix in: 4-6 tablespoons of Greek with Feta salad dressing (we use Renees), a dash of olive oil, salt, pepper and as much garlic that you like. Add 1/4 to 1/2 cup of sliced black olives. Bake until brown at 350F.... about 20 mins or so. You can add diced green or red peppers, more feta, parsley.. well heck.. almost anything.... You can change the dressing to ranch, italian... whatever you like. You can use calorie reduced dressing... but why? |
