"The cheese found me," Sarah Kaufmann says. She has been carving cheese professionally for three years.
She says, "it's much more delightful than working with wood or stone. You can snack while you work."
This sculpture took more than 50 hours to complete.
The cheese will last up to eight weeks, if cared for properly, and then it will be donated to a farm.
"It's emotion," she says of food art. "It comes to life."

What a waste *
Although to be fair it looks too yellow to taste very good, so I assume it's from the lower end of the market. Does she use blue cheese if making a statue of someone with varicose veins?
* yes I know it gets donated to a farm, but that still means it doesn't go into my belly.
