The show is run by a bloke by the name of Tom Vandeleur. Story goes that he's an Aussie pig farmer who discovered pig racing in the USA and brought it to Australia. He likes to wear big American style "cowboy outfits". When I saw the pigs they looked well cared for and keen to race / dive. My guess is that they get a tasty reward at the finish line and are racing for that. The diving pig definitely had her eyes focused on someone at the edge of the pool who was holding out a hand. Didn't look too keen to jump in, but the treats won her over in the end, and she got a snoutful as soon as she reached the hand.
